Scallion Pancakes

4 cups all-purpose flour
1 1/2 cups cool water
3 Tbsp. vegetable shortening
Salt, to taste
2 bunches green onions, finely chopped
Vegetable oil for frying
Soy sauce, to taste (optional)

Method

In a medium bowl, mix the flour with the water until it forms a dough. Turn the dough out onto a lightly floured surface and knead it for a few minutes. Place it in a bowl, cover, and set aside for 30 minutes.

Roll the dough to 1/8-inch thickness. Spread a thin layer of vegetable shortening over the entire surface, then sprinkle generously with salt. Top the entire surface with the green onions, pressing them lightly into the dough. Beginning at one edge, roll the dough into a long jelly-roll shape. Pinch or twist off (do not cut) fist-sized pieces of dough. On a floured surface, using a floured rolling pin, roll each piece to 1/8-inch thickness. If some of the green onions come out, just push them back into the dough.

Pour vegetable oil into a skillet until it is about 1/4 inch deep. Heat the skillet over medium heat then add 2 or 3 of the pancakes. Cook for approximately 3 minutes on one side, then flip and cook for 2 more minutes before placing the pancakes onto a paper towel-lined plate. Salt to taste and serve immediately with soy sauce for dipping, if desired.

Chinese food popular for holiday diners

Chinese RestaurantIt's not exactly chestnuts roasting on an open fire. But for many people, Moo Goo Gai Pan or maybe even the Pu Pu Platter are traditional dishes for Christmas.

On Christmas Eve, Christmas Day and throughout the holidays, Chinese restaurants do some of their briskest business of the year.

"As the years went on, we became busier and busier during the holidays," said Stanley Wong, whose family has owned the Kowloon restaurant in Saugus for more than a half century.

Jewish customers account for much of Wong's business this time of year. Chinese food has long been a popular destination for Jews on Christmas, when few other restaurants are open.

"Chinese restaurants, Asian-owned restaurants, those owners tended to be the only folks who didn't have Christmas, too," said Rabbi David Kay of Congregation Ohev Shalom in Orlando, Florida.

He said the many vegetarian items on Chinese menus are appealing to people who keep kosher.

For David and Maure Gardner, eating kosher Chinese food on Christmas is a tradition.

"On Thanksgiving, we have turkey," said Maure Gardner, who was dining with her husband at the Eden Wok in New York City. "Christmas Day, we always go out for Chinese food."

Jun Yang just opened a restaurant offering kosher Chinese food in Brookline, a town bordering Boston that has a large Jewish population. Shalom Beijing's 120 seats were nearly filled on Christmas Eve and Christmas Day, said Yang's wife, Li Su.

Coincidentally, the Jewish festival of Hanukkah began at sundown on Christmas.

For that reason, the restaurant added potato latkes to the menu, which features plenty of fish, chicken and duck but is free of pork and shellfish. A rabbi monitors the kitchen to make sure the food is prepared in accordance with Jewish law.

In San Francisco, the 13th Annual Kung Pao Kosher Comedy Show at the New Asia Restaurant ran Thursday through Sunday, with two shows a night. The dinner show featured a seven-course Chinese dinner and a 90-minute comedy show.

"And you don't have to be Jewish to come. Not all the jokes are based on the Jewish faith," said Pam Lawrence, who helped organize the event. "Last night, we had a whole contingent from Australia, and only some of them were Jewish."

At Kowloon, the restaurant in Saugus, Gino Ferrir and his family brought a pile of Christmas presents to unwrap as they waited for their lobster, shrimp and duck dishes to arrive.

"We come here every Christmas," Ferrir said Sunday. "It's my treat to my family."

Is it true you're a strict vegetarian?

Yes, so if a flustered waiter brings me a steak it's pretty funny. I don't even eat cheese, because there are animal enzymes in it. So when I ask for a dish without cheese they always forget, but I hate to be hard on them as I know how hard it is to be a waiter. I don't think I could do it. It's funny, because I eat out a lot now as it's finals, and I just don't have time to cook for myself anymore. So it's strange going out for three meals a day, and every meal they bring you the wrong food!

Fried Noodles Thai Style for Vegetarian

Ingredients:

• 100 gram flat rice noodles
• 2 shiitake mushrooms
• 4 vegetarian shrimp
• yellow tofu
• 1 tbsp. shredded carrots
• 1/4 cup bean sprouts
• 1 tbsp. dried, pickled chinese radish
• 1 chinese kale
• 1 tbsp. ground roasted peanuts
• 2 tbsp. sugar
• 1 tbsp. vinegar
• 2 tbsp. light soy sauce
• 1/2 cup water
• 2 tbsp. oil

Preparation:

• Wash all vegetables well.
• Cut the kale into short lengths and remove hulls and root tips from the bean sprouts.
• Heat oil in a wok over high heat and add the shiitake mushrooms, radish, kale and carrot and stir fry for several minutes.
• Add the remaining ingredients and continue to stir fry until done.
• Serve the Pad Thai with lime wedges, ground roasted peanuts and bean sprouts.

Easy Christmas Fruit Cake

Christmas Fruit CakeThis Chritmas Fruit cake has no added sugar or fat (suitable for a range of diets) but is still really sweet and rich. It should be stored in the fridge and eaten within one week. The Fruit cake is easy manu for your Chritmas and vegan can eat it.

Ingredient:

250g/2 cups of cooking dates with the stones removed

300ml/1 and a quarter cups of water (you could substitute a quarter cup of brandy or sherry for a quarter cup of the water if you like)

175g/1 and a quarter cups of wholemeal flour

450g/3 cups of mixed dried fruit of your choice - including lots of dried apricots works very well

2 teaspoons of baking powder

1 teaspoon of mixed spice

4 tablespoons of orange juice

How to Cook?

Heat the dates and water until the dates are soft. Remove from heat and mash with a fork. Add all the other ingredients and mix well. Spoon into a greased 2lb/900g cake tin and level top. If using the nut topping place rows of different nuts on top of the cake prior to cooking. Bake at 170C/340F for about an hour and a half until cooked. Once cooled the nut topping can be glazed with a little syrup (melt some sugar into hot water) or you can ice traditionally.

For decoration: You can either do a traditional marzipan and white icing topping or use rows of different nuts such as walnuts, pecans, brazils and almonds.

New Beer for Vegan !!!

Vegen Beer"Those looking for a beer of exceptional quality to share over the holidays need look no further than Samuel Smith. Samuel Smith is one of the few remaining microbreweries in England and the only one to use the classic Yorkshire Square system of beer fermentation--brewed in stone squares at the Old Brewery in Tadcaster since 1758. Their distinctive heritage of beer brewing includes a special Samuel Smith strain of yeast, hand-weighed hops and fresh well water.

Six varieties of Samuel Smith's beer are available in the United States, and from the lighter-colored India Ale to the dark and creamy Oatmeal Stout, each variety has a colorful history that further accentuates its pleasurable taste.

Samuel Smith's India Ale, first brewed in the 18th century, is a highly hopped beer that was made to withstand the three-month ship ride from London to Bombay. This variety of beer became known as IPA, or India Pale Ale. Because of its floral smell and invigorating yet well-balanced taste, it's a great primer for those just acquainting themselves with fine beer. Food pairings include Indian curries, cheeses (such as asiago, colby, parmesan or sharp cheddar) and shellfish.

Samuel Smith's Nut Brown Ale is a bit darker than the India Ale and has a nutty, almost caramel-flavored finish. Brown ale is one of the oldest brewing styles in England; it's even mentioned by Chaucer. This beer is absolutely ideal for festive occasions. Similar to Newcastle Brown Ale, it's smooth and pairs nicely with a roasted game hen, barbecued duck, pepper steak, or spicier dishes such as paella, any Thai food and pineapple curry.

In the late 1800s, brewers formulated Oatmeal Stout for lactating mothers. At the time, some even described it as a nutritional drink. The oats impart a great flavor to this stout, giving it a creamy body and a slightly bittersweet finish. As would be expected, smoked meats and cheeses pair wonderfully with this beer. Surprisingly, many desserts also complement its oat taste--chocolate is a perfect choice.

Brewers first introduced Imperial Stout to satisfy the courts of the Russian czars. It had a high alcohol content to withstand the journey made across the Baltic Sea from England. One of the most striking characteristics is its deep chocolate color and coffeelike taste, giving this stout a rather aristocratic air. Suitable food accompaniments include walnuts, filet mignon, caviar, oysters Rockefeller and cheesecake.

The Famous Taddy Porter takes its name from England's first commercially brewed type of beer and the train porters who consumed it. Reintroduced in 1979 after a 50-year absence from the market, this is one of the more popular varieties brewed by Samuel Smith. It has an almost black color and a roasted barley flavor, with nuances of nuts and dark chocolate. This beer is almost a meal in itself. However, it goes very nicely with seafood dishes, steaks and chocolate.

But the beer most appropriate for the season is Samuel Smith's Winter Welcome Ale. Historically, holiday festivals celebrated the oncoming winter season with special beer brewed for the occasion that had a higher alcohol content. This particular ale has a chestnut brown color and a sweet malty flavor with a hint of spices (particularly clove). Most holiday fare should go well with this ale, but standouts are smoked turkey with oyster dressing and ham with fresh pears and apples.

On a final note, all Samuel Smith beers are vegan products registered with the Vegan Society, so if some member of your family eschews the ham and turkey, slap her on the shoulder and put a Smith's in her hand."

What is a vegetarian diet?

What's so good about a vegetarian diet?

Here are six reasons:

1. Vegetarian cuisine is naturally low in saturated fats, and foods of plant origin contain little or no cholesterol.

2. Plant foods are also much higher in fiber than animal foods.

3. Many plant foods contain significant amounts of vital B-vitamins, and folic acid: and fruits and vegetables are powerful sources of photochemical - nutrients that help every organ of the body work better.

4. Vegetarians tend to eat fewer calories, since grains, legumes, fruits, and vegetables, volume-for-volume, tend to be lower in calories than meat and poultry. Studies have shown that as long as their diet is balanced and nutritious, the people who consume fewer total daily calories live longer and healthier lives.

5. Veggie lovers believe that foods from plant sources, which are lower on the food chain, are safer than animal foods, since pollutants tend to concentrate in fatty tissues. While raw fruits and vegetables can carry harmful bacteria and pesticide residues just like meat, you can remove many of these pollutants by washing the plant foods. Trimming the fat from meat or chicken is less effective. Meat, poultry, and seafood are also more frequent carriers of food borne illnesses than plant sources.

6. Environmental conservationists believe that having more plant-based diets is healthier for the planet. It takes less energy and less farmland to feed a vegetarian than it does to feed livestock.
